SPANISH CUISINE: Paella

MADRID will become the food capital of the world during the 2014 Madrid Fusion International Culinary Summit, to be held at the end of January.

More than 100 international chefs will meet in the Spanish capital under the slogan ‘The inspiration is in the street.’

Eating out will be discussed in talks, demonstrations, master classes, tastings and lectures.

The spotlight will turn on big cities (Istanbul, Bangkok, Lima, Washington, Tokyo, New York or Paris) as well as medium-sized ones (Bruges, Gerona or Agrigento), all serving as inspiration to chefs.

From January 27 to 29 experts will discuss young and promising chefs, culinary creativity and city restaurants.

Chef Andoni Aduriz and neuroscientists Luis Castellanos and Adrian David Cheok will talk about new food sensations in the ‘always connected’ cities of the 21st century.

The team from ElBulli Foundation, under the supervision of molecular gastronomy chef Ferran Adria, will pose 50 questions to challenge the way of understanding cuisine in a lecture to be broadcast also in New York.

Spanish gastronomy will have a special place in Saborea España (Taste Spain), a conference within the conference to showcase and pay tribute the Spanish cuisine and its most renowned chefs.

Parallel to MadridFusion, more than 100 wine-related companies will display their products in EnoFusion, Madrid’s wine fair.
