Iconic hotel resort, Villa Padierna, held a spectacular cultural and gastronomic night at its By The Sea Club dedicated to the gastronomic phenomena of the revered blue fin tuna and its “ronqueo”.
This exclusive event was a mix of culinary artistry, cultural immersion, and the breathtaking backdrop of the Mediterranean, fascinating a discerning audience with a sensory experience unlike any other.
As dusk began to fall, the luxurious seafront venue came alive with the rhythmic “snore” of the “ronqueo”, a term derived from the hypnotic sound of a master fish cutter’s razor-sharp knife gliding through a nearly 300kg Balfegó bluefin tuna, considered the world’s most exquisite and expensive variety.
Over 100 guests, drawn from near and far, gathered in anticipation, their wonder palpable as they mingled in the elegant surroundings of the By The Sea Club. A team of impeccably trained staff circulated with trays of meticulously created tuna-themed canapés, offering a tantalising preview of the evening’s culinary delights.
Bluefin tuna celebration’s fascinating journey
The star of the night, a colossal bluefin tuna, which had required six men to unload from its delivery vehicle was placed on a table beneath the pergola, became the centrepiece of a ceremonial spectacle. As twilight cast a golden glow over the scene, society’s most discerning gathered closely to witness the master ronqueador (tuner butcher) perform his precise and graceful art, expertly separating the tuna into distinct cuts for perfect culinary preparation. Adding depth to the experience, two representatives from Balfegó, the esteemed supplier, shared the intricate journey of this prized fish. One, a seasoned fisherman who played a role in its capture, detailed the sustainable practices that ensure the tuna’s unparalleled quality.
Guests were absorbed by the story of the tuna’s remarkable journey. Having crossed the Atlantic to spawn in the Mediterranean, near Mallorca, the fish endured an exhausting migration, losing much of its body fat before regaining some while feeding in the nutrient-rich Balearic waters. Once caught, it was kept alive in a calming pool aboard the fishing vessel, then transferred to a netted fish farm off Barcelona’s coast. There, in a stress-free environment alongside others of its species, the tuna thrived. This was an essential step in the process that enhances its flavour and achieves the perfect balance of meat and fat. This meticulous care, the representatives explained, is what elevates Balfegó bluefin tuna to its legendary status.
Anantara Villa Padierna’s Chief Executive Chef, Manuel Navarro Mena, provided further insight, revealing that the tuna was harvested on Monday to be served on Friday, which was a carefully timed process that allows the flavours to mature, much like ageing fine cuts of beef. This attention to detail ensures a depth of taste that distinguishes the bluefin tuna as a culinary masterpiece.

The evening reached its crescendo with a sophisticated cocktail-tasting experience, set against the shimmering Mediterranean Sea and accompanied by a wonderful flamenco performance that filled the night with Andalusian passion. The menu demonstrated the tuna’s versatility through a series of expertly crafted dishes: succulent grilled tuna steak, creamy Antequerana porra coupled with salted ijada, delicate tuna croquettes, and tasty tuna meatballs served with a rich tomato sauce. Each dish was designed to surprise and delight, leaving guests in awe of the tuna’s culinary potential.
